The Best Memories Are Homemade
Part 1: Granny Katie’s Old-Fashioned egg custard
I wish you could have known my great-grandmother, Katie Amerson. She was funny, always up for a party, and when you walked in the door, there was always a delicious draft coming from the kitchen. There wasn’t a day that went by that she didn’t cook. And if she didn’t have it, she would whip it up, your choice! It was no bother to her no matter the time. Cooking was one of her favorite things to do.
Granny especially loved the holidays! Ya know why? She got to cook! She knew just what everyone liked or didn’t like, and she made sure that it was all ready. No one went without something that they didn’t like because at Granny’s, everyone ate.
Although Granny loved to cook, nothing could top her Savior. Anytime you talked to Granny, her wisdom would be biblically sound. She always knew what to say! If you were worried about what people thought, she reminded you that no one else mattered if you are pleasing God.
For we are His workmanship, created in Christ Jesus for good works. Ephesians 2:10
Her love was a representation of Christ. She loved you where you were. You may not have liked her advice at the moment, but you could always look back and know that she was speaking truth into your life.
And now abide faith, hope, love these three; but the greatest of these is love. 1 Corinthians 13:13
We lost this precious woman in 2012. She handed down her “Special Grandmother” apron to me because she knew that I would be the “cook of the family.” Boy, do I cherish that apron. I pray that I am able to leave such a legacy as she did! Although I miss her and wish she could see all that I am doing, I wait for the day that I will see her again!
In the meantime, I want to share one of her special recipes.
Granny Katie’s OLD-FASHIONED Egg Custard
Ingredients:
1 unbaked pie crust (store-bought or homemade)
5 eggs
1 cup milk
3/4 cup sugar
1 tbsp oil
dash of vanilla
pinch of salt
Mix all together without beating eggs too long. Pour into unbaked pie crust. Bake at 300 degrees for 45 minutes.
